Easy recipe for crispy roast potatoes - an essential winter warmer

One of my absolute favourite winter warmers and an absolute must for cosy autumn days - roast potatoes with crispy skins and fluffy insides. Here's how I make mine with minimal effort!

To make perfect roast potatoes, you'll need:

  • New Potatoes or small roasting potatoes
  • Cumin seeds
  • Cooking oil
  • Salt & pepper
  • A couple of sprigs of fresh rosemary

The prep

Pre-heat the oven to 190 C and pour a tbsp of olive oil into a roasting tin and put it in the oven

Leaving the skins on the potatoes cut them up into small pieces

Pre-boil, if you're feeling fancy

This is optional - personally I only bother to pre-boil when I'm feeling like giving the roast potato process special treatment. This stage makes the insides lovely and fluffy, but I'm all about the crispy skins so often skip this stage

Boil the potato pieces for 10-15 minutes until they just start to go soft. Drain them, rough them up a bit by shaking them around in the pan. Leave them to dry out for 10 minutes or so

Add the potatoes to your roasting tin and sprinkle cumin seeds over the top along with salt, black pepper and a couple of sprigs of Rosemary

Stir the potatoes around in the roasting tin until they are all coated in olive oil, add a little extra oil if required but not too much

Leave them to roast for 45 minutes and check, giving them a bit of a shake about every 20 minutes or so. After 45 minutes, if they’re roasted to your liking take them out and enjoy. If you like them really crispy leave them in the oven for up to an hour - depending on how small you've cut your potatoes
